Easter is quickly approaching, and what better way to celebrate with friends and family than with some homemade, cannabis-infused treats?
Defined as food products that have been infused with cannabis oil, edibles can take many forms, such as beverages, candy, or baked goods. Edible cannabis products can take longer to experience the onset of effects since more time is needed for the body to absorb the cannabinoids and terpenes (the compounds that contain the plant’s potentially healing properties) into the bloodstream [*]. Plus, ingesting cannabis causes the body to turn THC into a stronger compound called 11-hydroxy-THC, which can amplify the sensations.
It’s a great idea to start low and go slow when consuming cannabis edibles, as well as be mindful that effects can last up to 12 hours or more [*].
Although it’s now easy to purchase pre-made edibles, it’s also easy (and fun!) to make your own, especially for holidays like Easter. Keep in mind that you can also choose to make this recipe without infusing it with cannabis.
We’ve added a festive twist to these raspberry lemon budcakes by My Edibles Chef. This recipe calls for cannabis-infused oil, which you can purchase pre-made or make your own. Keep in mind that if you’re making your own oil, you’ll first want to decarboxylate your dried flower.

Lemon cupcake batter:
- 2 cups all-purpose flour
- 1 ¼ cups sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup milk
- ¼ cup vegetable oil
- ¼ cup cannabis-infused oil
- 2 eggs
- 1 tsp vanilla extract
- ¼ tsp lemon extract
- Zest from 1 lemon
Raspberry jam buttercream:
- ½ cup butter, room temperature
- 3 cups icing sugar
- ¼ cup raspberry jam
- Fresh raspberries
Option: Split the batter into separate bowls and add a few drops of Easter-themed food colouring to each. That way, when you ice the budcakes, you will have different colours, creating a beautiful presentation when you serve them to guests.
Instructions to make the lemon cupcake batter:
- Preheat the oven to 350°F. Be careful to not exceed this heat so that you don’t burn the cannabinoids.
- Line a cupcake pan with cupcake liners. Feel free to get creative here with Easter-themed liners!
- In a medium-sized bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, cannabis-infused oil, eggs, vanilla extract, lemon extract, and lemon zest.
- Combine all ingredients; whisk the wet ingredients with the dry ingredients.
- Add the batter into the cupcake liners. Bake for 15 to 20 minutes.
- Insert a toothpick into the middle of a cupcake, and when it comes out clean, remove the cupcakes from the oven. Allow them to cool completely before icing.
Instructions to make raspberry jam buttercream:
- Beat the butter, icing sugar, optional Easter-themed food colouring, and raspberry jam until fluffy.
- Place the raspberry buttercream into a piping bag with your choice of tip. Pipe the icing onto each cupcake and top with fresh raspberries.
When determining the potency of each budcake, take your THC (or CBD) percentage and multiply it by the number of grams you’ve used. Then, divide that number by the number of budcakes you’ve made. For example, 10g of 10% THC flower = 1g or 1000mg of THC. If you make 12 cupcakes, then each cupcake has 125mg of THC.
